Watermelon Feta Salad

Ingredients:

  • 4 cups cubed watermelon
  • 1 cup crumbled feta cheese
    (Substitute: firm tofu crumbled, vegan feta, or chopped nuts)
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons olive oil
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine watermelon cubes and feta (or chosen substitute).
  2. Drizzle with olive oil and lime juice.
  3. Toss gently, then sprinkle chopped mint on top.
  4. Season with salt and pepper to taste.
  5. Serve chilled.
