Watermelon Feta Salad

Ingredients:
- 4 cups cubed watermelon
- 1 cup crumbled feta cheese
(Substitute: firm tofu crumbled, vegan feta, or chopped nuts) - 1/4 cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
- In a large bowl, combine watermelon cubes and feta (or chosen substitute).
- Drizzle with olive oil and lime juice.
- Toss gently, then sprinkle chopped mint on top.
- Season with salt and pepper to taste.
- Serve chilled.
